Classic European Sipping Chocolate: Heat 3 ounces of heavy cream until it is steaming hot (175 degrees). Add Lollie. Let the chocolate "cook" in the cream for two or three minutes, then stir to incorporate. Allow the blended ganache to steep for five minutes so its flavor fully develops. Before serving, return the chocolate to the heat and bring it to a simmer (170 - 175 degrees). Pour drinking chocolate into a demitasse and enjoy. If desired, dress with whipped cream, marshmallow or shaved chocolate.
